Cinnamon Rolls

My brother-in-law, C, has made the claim that these are the "best cinnamon rolls in the UNIVERSE". In fact, that is the official name of this recipe per the family website:-) After making and tasting these rolls I would have to agree, they are delicious. The recipe itself isn't too bad but make sure you give yourself enough time to make these amazing treats.
Recipe:
Dough: 

2 pkg (1/4 ounce each) active dry yeast 

1 cup plus 2 Tbs sugar, divided 

1 1/2 cups warm water (110* to 115*) divided 
1 cup milk 
1/2 cup soft butter 
2 eggs 
2 tsp salt 
8-9 cups flour

Filling:
1/2 C butter
1 C brown sugar
5 tsp cinnamon

In a large mixing bowl dissolve yeast & 2 Tbs of sugar in a 1/2 cup of luke warm water. The sugar helps activate the yeast.
In a saucepan, heat the milk, butter and remaining butter to 110-115 degrees.
Add the mixture from the saucepan to the large mixing bowl. Add eggs, salt, 5 cups of flour, and remaining sugar. Beat until smooth , add enough of the remaining flour to form a soft dough.
Turn onto a floured surface; kneed until smooth and elastic. About 6-8 minutes. Place back into bowl and let rise in a warm place for an hour.
Roll dough out into  a large circle and with soft butter spread over the dough until well-coated. Spread brown sugar and sugar on top of butter.
Roll dough into a log lengthwise
Using either string (or we used non-flavored floss) cut out rolls.
Placed on a GREASED baking sheet and let rise for another 10-15 minutes. Bake at 350 for 20-25 minutes. Rolls should look golden brown.


Frosting: 

2 oz cream cheese 

1/4 cup butter 

1 cup powder sugar 
2 tsp vanilla (Mexican

Add frosting to rolls while they are still hot to allow frosting to melt into the rolls.

Those look great! And not too tricky of a recipe. I'll put that down on my list for the next time I feel like cooking. (Probably in 6 months when I don't have the baby pukes hah)

Made these last Saturday, and they are so good. Even my 2cups of whole wheat flour tasted great in there. This is a keeper! I also loved that it made a lot. Great thing to make for a crowd.
